Hearty Quinoa Fritters with Garlic Honey Mustard Aioli (GF)

I cook for just myself most of the time so big batches of the same thing usually doesn’t fly. Why would I purposefully make myself enough food so that I’m eating the same thing for lunch and dinner for days at a time? My palate needs variety! That being said, I came across this recipe from mindbodygreen that inspired me to transform my days-old quinoa into a tasty, low-maintenance dish, which definitely gave my tastebuds something to swoon about.

Here is my adapted version of the recipe–

What you need:

Quinoa Fritters

3 tbsp coconut oil
1 cup of cooked quinoa (more points if you’re in the day olds)
3 medium eggs
1 medium carrot, shredded
1 onion, chopped to your preference
2 tbsp celery, finely chopped
1 tsp dried dill
1/4 cup flax meal
Salt & pepper how you like it

Garlic Honey Mustard Aioli

1/2 cup soaked almonds or cashews (minimum of 4 hours)
2 cloves of garlic, minced
1 tbsp honey mustard
2 tbsp apple cider vinegar
2 tbsp olive oil
1/4-1/2 cup water, as needed

How you make it happen:

Combine all fritter ingredients into a large bowl.

Add 2 tbsp coconut oil (or any high-heat oil of your choosing) to a medium-sized frying pan on moderate heat.

Scoop out fritter mixture with a tablespoon into the frying pan and flatten it a little. You can put as many fritters in the frying pan (try to say that ten times fast) as you want, just make sure the edges don’t touch.

Let cook for a few minutes on each side until you see just the slightest golden tint, and then set on paper towels to drain.

Repeat this process between batches, dolloping extra oil when you see it fit.

Garlic Honey Mustard Aioli

Blend all ingredients (except water) in a high speed blender and blend until well-combined. Then, slowly add water and blend until you reach the desired consistency.

Savor the flavor and rejoice in your ability to repurpose leftovers!

*I garnished mine with celery leaf and did a quick veggie sauté on the side.
